Tokiwa Sakari is a Junmai sake which uses the Meiri-Ogawa yeast which Meiri brewery developed. The umami and sourness of rice is perfectly controlled to slowly spread throughout the palate and leave an after-taste that is just right. The sake is a good match with meat and other thick flavored dishes.
