Hwayo, a fairly new distillery in the Korean soju playing field, is trying to elevate soju to a higher standard. Where soju has always been an cheap/affordable drink often made with cheap ingredients, Hwayo has gone back to tradition is making their soju only with Korean rice, local natural rock water and nuruk (a traditional Korean fermentation starter). This process gives Hwayo soju a much more smooth mouthfeel, a whole new soju experience if you have only had normal soju before.
